New England’s Best Pancakes

Does Elmer’s Store, located in Ashfield, Mass., have the best pancakes in New England? — a region that debates its pancakes quality with the grim seriousness of Puritan religion. Sure, why the hell not. My money is still on Polly’s Pancake Parlor in Sugar Hill, NH, but I’m open to your thoughts on Elmer’s Store and any other fine pancake establishments in the region or beyond.

Conversely, it’s a good time to discuss what makes a great pancake: light and fluffy, uniformly browned on both sides without being burnt, obviously, but they should also be tasty enough to eat without butter or maple syrup, not just a conduit for them.
